Eat At Home Day 50: The best stuff has happened since I started this rigamorle.

I think this eat at home challenge is one of the best things that have ever happened to me. I am sincerely learning how to cook, my blood sugar is more stable, and I am less stressed out in general. Not to mention, I am saving money so much faster than I ever have before.

This post is about the most exciting stuff that has happened since we started this experiment.

  
The apples you see here were sliced in preparation for the dehydrator, which is the coolest purchase since I last updated.  I am eating a ton more fruit and vegetables in the dried form now.  We also bought a slicer to go with it and speed up the apple cutting process. That is the second coolest purchase because also lacerated his hand on it within the first 30 minutes of ownership.

 and I quit eating quinoa by the way. It might be because Alex doesn't like it. I am missing the protein punch in the morning but I am eating fresher food now.

 This is by far the best snack. Corn tortilla chips are always great but we found by simply frying them, we could make them at scratch from home. In retrospect I can't call that ground breaking, but it blew my mind at the time. These suckers are fantastic with sour creme and picante sauce.

 At one point someone at work said the word kale to me and I couldn't get it out of my head. Stir fry is the most lenient recipe I know so I stuck it in there. It was delicious. I also went nuts and put garbanzo beans in there because Runners World had a stir fry section in this month's athletes pallete. Kale is like spinach right? I was a bit conservative and didn't use the curry powder that they recommended that I totally had.

 Dehydrated Mangos rock. They just do. Second on the list is banana chips. I don't wake up in the middle of the night bucking like I used to do (read: charlie horse).
