Homemade pasta attempt # 3: Drying overnight

We decided that our pasta might taste better if we let the pasta we made yesterday dry overnight. It did. We had to cook it just so.


The super thin noodles cook freshly made at 30 seconds in boiling water. Then they were overdone. We haven't tried those overnight yet.

The super thin were made size 7 thickness on the kitchenaid mixer attachment and the spaghetti cutting tool. They looked like this.
We dried our thicker noodles overnight on our hanging rack. By thicker, I mean we used the level 7 on our pasta roller attachment and used the wide noodle cutter.

To reheat the pasta, we boiled it for 2 minutes or until the water went white. Alex said he liked the taste and the texture was getting better. There was pointedly something about the taste that I didn't like. It was too filling without any flavor.

The noodles still stuck together a little so I think putting a little bit of oil into the water will help keep the noodles from sticking.

I don't know how those other gluten free pasta websites can claim that you eat the pasta immediately. Without drying it out for a little the pasta just falls apart without being cooked as soon as you put it in the water.
